Fast & Furious High-Protein Asian Chicken Lunch

A quick, easy, and high-protein Asian-inspired chicken dish in 15 minutes with minimal prep!

Ingredients (1 serving)

  • 1 chicken breast (boneless, skinless) – (~40g protein)
  • 1 tbsp soy sauce (low sodium)
  • 1 tsp sesame oil (or olive oil)
  • 1/2 tsp ginger powder (or 1 tsp grated fresh ginger)
  • 1 clove garlic, minced
  • 1/2 tsp chili flakes (optional, for heat)
  • 1/2 tsp honey (or sugar substitute)
  • 1/2 tsp cornstarch (optional, for thicker glaze)
  • 1 cup stir-fry veggies (e.g., bell peppers, snap peas, carrots)
  • 1/2 tsp sesame seeds (optional, for garnish)
  • 1/2 green onion, sliced (for garnish)

Instructions

  1. Marinate the chicken: In a bowl, mix soy sauce, sesame oil, ginger, garlic, chilli flakes, and honey. Coat the chicken and let sit while prepping veggies (or skip marinating for faster cooking).
  2. Cook the chicken: Heat a pan over medium-high heat. Cook the chicken for 5-6 minutes per side until golden brown and fully cooked (internal temp 165°F / 75°C).
  3. Stir-fry veggies: In the same pan, toss in the veggies and stir-fry for 2-3 minutes. Add a splash of soy sauce if needed.
  4. Glaze (optional): If you want a thicker sauce, mix 1 tbsp water + 1/2 tsp cornstarch, add to the pan, and stir for 30 seconds.
  5. Serve & enjoy! Garnish with sesame seeds & green onions.
