High-Protein, Low-Sugar, Low-Carbohydrate Muffins






Ingredients:

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup ground flaxseeds
  • 2 scoops (approximately 50g) vanilla whey protein powder (or a plant-based alternative)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup olive oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup erythritol or another low-carb sweetener
  • 1/2 cup blueberries or raspberries (optional, for added flavor and minimal carb increase)

Instructions:

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it to prevent sticking.

  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the almond flour, coconut flour, ground flaxseeds, protein powder, baking powder, baking soda, and salt.

  3. Mix Wet Ingredients: In another bowl, beat the eggs and then mix in the almond milk, olive oil (or melted coconut oil), vanilla extract, and erythritol until well combined.

  4. Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix. Gently fold in the berries, if using.

  5. Bake: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
